Hi,
Sorry to hear. I know you want to breed for a Shiny Snubbull, as long as you do not remove (and put) your Adopt out (in) of DC. The DC thinks that is is still a Snubbull. So it won't effect the chance of an egg. Unfortunately resets or de-evolutions are not possible.
Please read the webpages carefully:
The migration page says: "Held items do not transfer." This means you need to add an everstone, if you do not want to evolve your VAs.
The daycare page says: " Every day, our professional trainers will train with your Virtuadopts, whether it be hatching eggs, or raising their levels."
Crossing my fingers for your Shiny.

Sorry CallsatMidnight, currently there is no way to de-evolve adopts.
Though! Kitsu had a suggestion thread about such an idea if you wanted to throw your support at it: viewtopic.php?t=24196
